easiest cookies EVER

These bad boys almost make themselves.  That’s how easy they are.  Maybe you’ve made these before.  The recipe has been around for awhile now and it now lives in my brain because you don’t really even need a recipe.

This is all you need:

  • One box any flavor cake mix
  • Two eggs
  • 1/2 cup vegetable oil

Mix together, drop onto cookie sheets and bake at 350 for 12-15 minutes.

That’s IT.  And they’re not just okay or acceptable cookies – they’re super delish!  If you want to add something like nuts, chocolate chips, dried cranberries, anything – go for it.  Today I made lemon and strawberry cookies and added white chocolate chips to both.  Scott requested lemon and strawberry has always been Lissy’s favorite.

I add chips to the dough and then press some gently into the top of each cookie before baking, and finish off with a dusting of sugar.

If you’re in a pinch and need something yummy to bring somewhere, these are your answer.  Just keep a few boxes of any flavored cake mix on hand and get as creative as your heart desires!

I’m bringing some to our Easter lunch tomorrow.  🙂

And with that I wish you and your family a very blessed, happy Easter.  He is risen.  He is risen, indeed!!

I used to do the holiday sprinkles from Aldi but finding out you can do them with any mix OPENED UP MY WORLD..sprung the doors WIDE open..shh, but you don’t have to share with the world, can’t it be our secret? 🙂 I love the plate you put them on, that is QUITE lovely! Glad you had an amazing Easter..once again loving on your blog!

    1. Denise, you will be amazed at how yummy they are! I got into this groove, a batch of cookies a week, they are that good and I made excuses to make different ones..the chocolate with mint chips or even crushed candy canes at Christmas..as Wendy said, be creative..oh the things you can think!
